Hi

I'm looking to grow a lot of San Marzano tomatoes this season.
Afterwards i was hoping to put the whole tomatoes in a Mason Jar after peeling them and store them for when i want to use it.
I've looked on the internet on how to do this, but i have some questions around this and was hoping others might know how.

The method I found was to fill the jar with whole peeled tomatoes, then pour boiling water in them and seal them, but i'm afraid this will make it too watery afterwards for pizza sauce.

Another way is to crush them and boil them and then put in the jar but that would make more of a pasta sauce instead of a pizza sauce.

I think the best option is adding boiling water to the whole peeled tomatoes and getting as much water out of them before crushing them right before use.

What is the best way to do this? Are there other options?

Maybe throw them in the freezer? Idk...
