I’m pretty happy. This was a lot of fun to make and it was delicious.

Thoughts from the process:

Not sure how a 4 hour pre-ferment works when mine barely reached the necessary amount after 24 hours.

He used a rounding technique after each folding session that I want to get better at. Made it look easy but I had a lot of trouble from the stickiness.

I would kill for more counter space.
