My first PYCM!
![]() | My first bottle of PYCM. I believe this is one of the most hyped up white burgundy producers out there. I’ve been wanting to try their wine, and this Saint Aubin 1er Cru 2021 is the only one I could source. So, there’s no other choice but open this “too early”. For those who don’t know, the producer is based in Chassagne-Montrachet but owns vineyards in multiple villages in Burgundy including Saint-Aubin. They make both red and white, but they’re primarily known for their white. They also make wines from purchased grapes, but they do not distinguish negociant and domaine businesses by label. I haven’t really seen people discussing difference between the two, and some of their most popular bottles are of négociant business, so maybe there isn’t much quality difference. This cuvée is made from fruits from 3 premier cru sites in St-Aubin the producer owns, and is one of their biggest cuvées in production quantity. The cuvée started a few years ago when they didn’t get enough fruits for each respective vineyard due to frost and since then, they make this cuvée instead of 3 cuvées from 3 vineyards.
