2001 Sassicaia and spicy Indian food, what a pairing!

Drank from a 375ml bottle.

I'm a huge fan of half bottles, they let you enjoy a glass of nice wine without committing to an entire bottle. Perfect for a glass at home before going out for the night.

Stood up for a few hours before opening. Needed a Durand to open, there was some discoloration on top of the cork. Thankfully, cork didn't crumble and bottle was totally fine, no cork taint, no brett.

First sip was actually ready to drink right away, tannins weren't harsh at all. But decided to slow ox for an hour before drinking, then drank over the next hour.

Over time, developed notes of dark plum, blackberry, dark cherry, rosemary. On the palate, medium acidity and nice long finish. Tannins definitely mellowed out with age.

Shockingly, this paired very well with spicy pongal (a South Indian rice and lentil based dish). Another reminder that Indian food can pair really well with the right red wine, even though restaurants continue to insist on sparkling and semi-dry whites as the right pairing.

I'd say this is squarely in the drinking window. I think there are years ahead on this, but I don't expect it to get better with time.

I have one more half bottle left and intend to enjoy it in the same manner within the next two years.
