Fresh caught trout, with a cheeky Nicola Bergaglio Gavi Di Gavi 2021
| My neighbour went on a camping/fishing trip in the Victorian High Country, brought me back a stunningly fresh trout. Roasted with garlic, lemon zest, dill, and a splash of wine. Baby spuds (al dente, I’m not an animal) and asparagus, with the same flavours. I don’t have any experience with Gavi di Gavi, this was really lovely. I got hits of nectarine and pear on the nose, and something a little savoury, like almond meal? Medium bodied, with more white stone fruit and spice, this was perfect with dinner.
