1989 Bordeaux!

By far the oldest wine I’ve ever had. Double decanted and gave it a sip. When first opening, it was extremely dull and flat - definitely no tannins and not much fruit to speak of, either. Almost seemed watered down.

An hour later it had developed a hint of an almost soy sauce type scent and the fruit started to show itself - it was strange, like it started to become more flavorful as it sat.

At 2 hours, caramel and ripe fruits started to come through and the scent of soy subsided. It was excellent! I didn’t write tasting notes down so I can’t be more specific than those few that I remember but WOW what an experience!
