First attempt using pizza flour

Used the recipe on the back of the KA ‘00’ Pizza flour bag and put it in the fridge for about two days. Had good texture on the crust, flavor was mild so I may leave it in the fridge for an extra day or two next time. What is the maximum amount of time you can keep it in the fridge?

Ingredients: - 2 cups (232g) King Arthur ‘00’ Pizza Flour - 1/8 teaspoon instant yeast or active dry yeast - 1/2 teaspoon granulated sugar - 1 1/4 teaspoons (8g) table salt - 3/4 cup (170g) water, lukewarm, (105° to 115°F)

Cooked it on a cast iron pizza pan at 500F for 12 minutes. Will probably crank this up to 550F next time.
