My overnight purple sweet potato bread turned out so pretty, the inside was a pretty lavender color. I didn't have a specific recipe for this one, it was done mostly by feel and look. About 3 cups of flour, 1 cup of mashed potatoes, 1.5 cups warm water, 1 teaspoon yeast, and some salt to taste. Mixed but not kneaded and left to rise overnight, baked in my Dutch oven.
