Really been enjoying this Kagoshima Kabuse sencha from Upton Tea. Partially shaded for a couple of weeks right before harvest so it straddles gyokuro and sencha. Lovely green. It has a wonderful balance between bright green and savory umami with a hint of astrigency. I've been playing with brewing from the suggested 2.25g/6oz 170F/2min to my now preferred 6g/5oz 165F/85sec (1st pull).
