White Bread from Ken Forkish’s Recipe

I’ve started baking my own bread in the past couple months and by God while it tastes so good it has not been good for my weight. Can’t believe it took me this long to take the plunge and it’s so much better than the sliced sandwich bread from stores!

Recently I’ve been attempting the White Bread with Poolish recipe that Forkish has in his book. I’ve been pretty satisfied with the taste but not with the final rise or the crumb of the bread. There just isn’t the volume I would like and the crumb is a little dense.

I think I’m either not folding properly at the mixing stage so there isn’t gluten development, or maybe I’m underproofing. Any bread wizards able to diagnose my bread woes with a single photo?
