| Shoutout to yall for helping me get this crumb! I didn’t post; I just searched “croissant” and read through probably a hundred (literally) troubleshooting posts. Finally realized 5-4-3 was what really worked for me as well as making the dètrempe and doing my turns on the same day instead of letting it rise in the cooler overnight.
