Recipe below copied and pasted from @squashedpickle on IG. I made larger tarts than the video showed, and I didn't draw anything on the parchment paper. I just eyeballed it and it was fine.

Sea salt / black pepper 2 tbsp olive oil 1 tbsp honey 1/4 lemon Sage leaves 3 medium leeks 200g sour cream 350g puff pastry

To make the tart place a large piece of parchment onto a large baking sheet, half the leeks lengthwise and washed gently. Arrange them snuggly and cut side down, on parchment paper into three pairs alternating green and white ends for balance. Each leek halve will become a separate long tart. Draw around each set of leeks with a pencil and put the leeks to one side. Within the stencil lines, drizzle olive oil and honey. Generously sprinkle sea salt and black pepper. Place the sage leaves into the stencils along with an even sprinkling of lemon. Lay the leek halves back on top and spread the sour cream over them evenly, finally seasoned again with more oil, honey, salt and pepper. Next roll out your puff pastry on a lightly floured surface. Cut your rectangle of the pastry into three and then roll each out at least 4 cm long and wider than each set of leaks. Using a rolling pin lift each rectangle of pastry carefully and lay on top of each set of leeks. Bake in a hot oven for 35 minutes until the pastry has risen and his dark golden brown allowed to rest for five minutes then lay on a chopping board and flip it upside down. so delicious!
