This drink was a riff on another drink I concocted whilst working on the Lower East Side of Manhattan NYC. I used a Thyme Tincture, Muddled Thyme, Gin, Agave, Water, and Citric Acid.

Ingredients :

2oz Gin(of choice)

1oz Water

.75oz Agave Syrup

1/3 Bar Spoon Citric Acid

1-2 Sprigs Fresh Thyme (By Choice)

Directions:

Muddle Thyme sprig(s) to release oils. Add remaining ingredients to a Shaker tin with ice, shake well until chilled. Using a spritzer/spray bottle spritz a cocktail glass with Thyme Tincture (Cocktail Glass of choice). Pour mixture into Glass/Coupe(if serving up), using flavored ice (I prefer using the same ice used for shaking because it's been seasoned). Garnish with Thyme sprig (optional; use garnish of choice), Serve....or Sip!.

Thyme Tincture :

I used a handful of fresh Thyme sprigs (use as much to taste), let seep in Gin (roughly 1 1/2 cups (enough to cover Thyme). Steep until desired aroma and taste is achieved. Bottle and use to aromatize the selected glass.
