Southside Sour?

This is a riff on the Westside Sour. I don’t know if the Southside sour exists already, but we’re calling it that because I swapped the bourbon from the original cocktail for Reposado Tequila and added egg white for a great foam.

Here are the specs:

2 oz Reposado Tequila (I used Olmeca Altos)

1 oz Grapefruit Juice

.5 oz Falernum (Maggie’s Farm Falernum since it is rum based, it makes a difference)

.5 oz Lime Juice

.25 oz Agave Syrup

1 oz Egg White (I use pasteurized. Wasting an egg in this economy?)

All all ingredients to a shaker tin. Dry shake 5-15 seconds. Then add a large rock of ice to the tin, shake again for 10 -15 seconds. Strain over a large rock of ice.

Garnish with a grapefruit wedge.

This cocktail is AWESOME. I am typically a whiskey guy, but because the weather is getting warmer I’m going to be focusing on Tequila and Rum cocktails for around the pool in the summer. Cheers!
