Recipe:

2 oz Blanco Tequila

½ oz heavy cream

1 oz Lime Juice

½ oz Agave Nectar

¼ oz Blue Curacao

1 Egg white ≈ 1 oz or 1 oz Aquafaba

1 Dash Grapefruit Bitters (Optional)

Mountain Dew Baja Blast to top.

Dry shake all but the blast for a while, then shake on ice for as long as you can stand it, strain into a chilled Collins glass while simultaneously pouring in Baja Blast until you reach the top. Set it in the freezer for 4 min or so, then use a straw in the center of the foam to add additional blast until the foam rises above the rim.

The Baja Blast-Off is a tequila take on the Ramos Gin Fizz. I used Tapatio 110 if anyone is wondering. I don't think I used enough heavy cream in this reiteration, so I'll bump it up a ¼ oz. It was still tasty though.
