So after everyone's lovely recommendations about chartreuse cocktails and ideas I had a go at making one myself. Think the name needs some work but basically this is an aviation with yellow chartreuse instead of maraschino which ends up giving a dry, herbal flavouring, enhanced with honey. Also not set on the garnish (there's no cherry so?) but itl do for the mean time. Anyway! Here are the specs:

45ml London dry gin 10ml Yellow Chartreuse 10ml Violet liqueur 15ml Lemon 10ml Honey cordial

Garnish: cherry+spritz of yellow chartreuse over the top.

Ive been making saffrone infused gin at work as well recently and might see how this plays with that, should bolster the flavour of the chartreuse? Idk, pretty happy with this overall though.
