Forgive my terrible photography skills! Khao Niao Mamuang, aka mango sticky rice is a Thai dessert consisting of thai sweet sticky rice, coconut milk, and fresh mango. I wanted to make a cocktail similar to mango sticky rice as it’s one of my fav dishes.

Recipe: 1.75 oz Glutinous rice-infused vodka 0.5oz mango syrup 0.25 oz cream of coconut 0.5oz lime juice barspoon Pandan syrup Top with sweet thai sticky rice foam

thai sticky rice foam: Infuse coconut milk with 1 cup cooked glutinous rice (infusion i did was around 10 hours), then mix with 2 part egg white : 1 part rice-infused coconut milk and a tsp of sugar. Put into an isi can of some kind and charge once, shake heavily and let rest for an hour. Shake heavily again and add to drink.

Overall I’m very happy with how it turned out. The foam is very rice-forward which I was a little worried wouldn’t work out given the other strong flavors in the drink. The drink itself works really nicely together and I find the pandan is good for pulling all the flavors together to work in harmony.
