![]() | The Clover Leaf No. 2 ???? 30ml Pink Gin 30ml Campari 22.5ml Lemon Juice 7.5ml Maraschino Liquor 1 Heaped Barspoon Mango, Passionfruit & Papaya Yoghurt 6 Raspberries Egg White Add egg white and raspberries into a tin, muddle raspberries, add all ingredients into the tin. Dry shake 20-30 seconds, then wet shake for 7-10 seconds. Double strain into a coupette and garnish with Angostura & Peychaud's Bitters hearts. Bev number 17 and she's a pretty one - inspired by the Clover Club, a Gin Sour with fresh raspberries (sometimes raspberry syrup). Originally made this by infusing the Campari with the raspberries, but adding them fresh brings the colour out a lot better - the egg white and yoghurt add the texture and round out the bitterness of Campari and earthiness of the Maraschino and Gin, decided to go with a tropical yoghurt just to add a bit more flavour (would work with plain or other tropical adjacent yoghurt, could be quite nice with a cherry or strawberry yoghurt too!).
