Rhubarb Gin Sour

I used Jeffrey Morgenthaler’s rhubarb syrup recipe.

2oz Song Cai Dry Gin

1 oz lemon juice

3/4 oz rhubarb syrup

1oz egg white

Dry shake, wet shake, double strain into glass. Top with 3 drops Angostura Bitters.

Quite good, but also very dry. I think it’s an interaction between the rhubarb and gin - neither was that dry on its own.
