Polar Bear Swim
| Made this for an El Dorado rum comp earlier this year and figured I should post it now that it's getting cold again. My inspiration was imagining what would be served at a Tiki bar in northern Manitoba. The spruce tips and mint give it a nice cooling wintery feel, while the rum and blueberry push it towards Tiki without being too tropical. The ice popping out over the foam is supposed to look like an iceberg in a snowy lake. 1.5oz El Dorado 12 .5oz Black Spruce Tip Vodka* 1oz Blueberry Cordial* 4 Dashes Top Shelf Mint Bitters 1 Egg White Soda Reverse dry shake with egg white then strain into highball glass over large ice cube Top with soda *Black Spruce Tip Vodka 30g Black Spruce Tips 1 Cup Vodka Combine in ISI Whipper and charge twice, shaking for 5s between charges Infuse for 3m30s before opening and straining *Blueberry Cordial To be totally honest I lost the recipe for this but it's probably like equal parts by weight frozen blueberries, sugar, and water, simmer for like 30 minutes before mashing the berries, strain, then add citric acid powder at around 5-6% of the weight.
