A lovely Daiquiri riff! Light and refreshing. It's such a great drink. The grated nutmeg really adds a lot to this one—I initially forgot it but added it after the first sip. I think with the nutmeg, this would go well over a large cube too!

• 1½ oz (45 ml) light rum

• ¾ oZ (22.5 ml) fresh lemon juice

• ½ oz (15 ml) rich simple syrup (2:1)

• 1 dash orange bitters (or absinthe bitters) ** I used orange

• Salt: 2-3 drops saline solution (optional)

• Absinthe rinse (optional) ** I opted not to

• Nutmeg to grate

  1. If using, rinse a chilled coupe or Nick & Nora glass with absinthe rinse and discard excess.

  2. Add rum, lemon juice, simple syrup, bitters, and saline (if using) to a shaker.

  3. Add ice and shake until well-chilled.

  4. Fine-strain into the prepared chilled glass.

  5. Grate fresh nutmeg over the top as a garnish.
