Pineapple Banana Rum Daisy

I love pineapple, and after making a pineapple martini I thought to myself, "pineapple and rum are way better friends" so here we are. This is a daisy, so it is only sweetened with the unsweetened juices and liqueurs.

Pineapple-Banana Rum Daisy

  • .5oz fresh lime juice
  • 2oz unsweetened pineapple juice
  • 1oz Barbancourt (or French styled) Aged rum (I used Estate Reserved 15yr)
  • 1oz good white rum (I used Ten to One Caribbean White Rum)
  • .5oz good banana liquer, don't skimp, the cheap stuff tastes like chemicals. (I used Tempus Fugit Creme De Banana)
  • .25oz maraschino cherry l iquer (I used Lazzaroni as I wanted more fruity cherry)

Shake with ice and strain into a nice glass.

Holy balls that's good. Pineapple right up front, aged rum, the white rum gets dominated even though Ten to One has some good funk, you could go full Jamaican for the split. I recommend a aged dark rum of you go Jamaican, an unaged agricole of you use a mellow white rum. Plantarey or Probitas would fuck hard here. The banana is subtle, bump it to a full oz of its a good quality liquer, perhaps remove the maraschino as it gets lost.

Even as it is though, it is really delicious. I regret nothing. Try this because pineapple, rum, and GOOD banana liquer are a sex crazed trio and they will liven up the party.

I must again state the importance of high quality banana liquer. The difference between real banana and artificial is beyond words. I will never use my old bottle of artificial banana liquer again.
