60ml Apple Juice

30ml Del Maguey Vida Mezcal

15ml Lemon Juice

15ml Agave Syrup

Top with @beavertownbeer Neck Oil (~ 90ml)

Add all ingredients minus IPA into a tin and shake, strain over fresh ice in a highball, top up with Neck Oil and garnish with a lemon wedge on the rim.

Bev 22 and sadly the end of my 2nd menu - quite the contrast to the Strawberry Cheesecake in my last post. I wanted to create something bold, something that really shouldn't work but says “f*** you" to anyone that doubts it. Mezcal AND IPA? Crazy talk. But it bloody works. The Lemon draws out the fruitier, cirtus notes in the Neck Oil and the apple and agave round off the smokiness of the Mezcal, coming together to make a surprisingly tasty and refreshing highball, that is still pretty chaotic in nature at the same time - listening to Lynyrd Skynyrd is mandatory whilst consuming btw, cheers!
