Second time making Roasted Bone Tonkotsu

Recipes from Ramen_Lord's book but I might have used too much trotters in the broth (5 lbs.) to make up for the femur bones which I couldn't buy enough of, as it yielded way too much collagen for my liking. You can see the collagen film formed fast. Also, chashu turned out tender and moist I think due to it being fully submerged while being boiled.
