Brother's birthday - first half, this was too ambitious
Huge respect to people who do this for a living and can bang out hundreds of pieces a day, I don't have the patience or the speed yet. Bluefin and hamachi belly were easy to do, the yellowfin and salmon were too wet and I struggled to shape those correctly.
