Ribs - wrapped in foil or no?

Ribs - wrapped in foil or no?

Exactly the title. Do you prefer to cook your ribs, outdoors, wrapped in foil or not?

So years back, I made my own smoker/grill from a propane tank. It was in a house I bought and thought to myself “man, this would make a great grill” lol - I get a big fat hard wood fire going in it in the morning, let it cook down to coals at which point I close the top lid and the bottom door. After around an hour of being shut down tight, the temperature will stay right around 200° all day and into the night. It really does work great. If I need a little more heat, I can open the doors up a little bit and to cool it down I just shut it back down. There’s always coals in it the next morning if I’m going to cook on it again. This thing is thick steel and will definitely last me the rest of my life.

Anyhoo - foil or not when making baby back ribs? I’m thinking about trying it today with no foil - just cooking them for 4 to 6 hours in there at around 200°. What do you think?
