Chicken thigh birria w/ maple gochu crema

24 hour marinated thighs in a from scratch made birria with ancho, guajillo, arbol adn Morita peppers. Warmed corn tortilla, queso fresco, cilantro, splash of lime, cilantro and the best crema top it off!

Grilled over oak charcoal with an apple chunk in my Drumbo drum smoker at about 325.

The recipe for the crema is incredibly easy and you can use any rub but I used my newest product, Uncle Hemmy’s Gochu Knees Weak, it’s as follows;

1 Heaping tbsp of my Gochu Knees Weak 8 oz - sour cream 1 lime - squeezed 2 cloves of garlic minced 1.5 tsp sesame oil 1 tbsp maple syrup 1/2 tsp salt

Mix in a bowl and done!
