Tritip that is... Too marbled?

This is a weird post. I got a USDA prime tri-tip where the outside was quite marbled. I had no idea just how marbled the inside of it was going to be, also. I smoked it to 130, and it's delicious! But too fatty to eat in the way that I would normally eat tri-tip. It would be like eating 6 oz of marbled wagyu.

So I guess.. any recs on what else to do...?
