Good or bad cooking? High end restaurant “medium rare” fillet mignon

I received this at one of the most expensive restaurants at my city. I told the server that this was not a “medium rare” fillet mignon. I love red meat but this huge gray band was a dissapointment for me and the center was completely raw. The change in texture of each bite was terrible.

They told me that this was medium rare and if i didnt like this doneness they could cook it more. It pissed me off. I felt like a Karen here but i paid a lot for this… am I wrong here?
