I found a single seed in a store-bought fuyu persimmon that I was eating. I was planning to stratify it in the fridge for 12 weeks, so I placed it in water first to prepare it. I forgot about it for several days and today I noticed this.

This is a root (or shoot), definitely not fungal growth.

This is germination for sure, no? How is this possible without stratification?

This was a store-bought fuyu persimmon, and these have typically been seedless.
